Gwyneth’s Brownies

I’m a little embarrassed to admit that I subscribe to Self Magazine.  Not that there is anything wrong with it– but now that I’m thirty-something, happily married, with three kids – I know I’m probably no longer their target audience!    But I am a magazine junkie.  I have a hard time resisting magazines in the grocery store, especially if they look pretty and especially if they have anything to do with food, cooking, or health.  But I do try to resist, as they are so overpriced at the checkout – which brings me back to my justification for subscribing!   I allow myself three magazine subscriptions per year, and when that year is up,  instead of automatically renewing, I switch to something else.  And I do read my magazines.  They are like candy in my mailbox and I devour them from cover to cover!

So a few days ago I happily discovered my Self magazine in the mailbox.  I flipped immediately to the Gwyneth Paltrow feature, which included several of her favorite recipes.  Her brownie recipe looked especially enticing and I thought to myself, “ooh, chocolate chips sprinkled on top, I should create a vegan version of this!”  So I skimmed through the ingredients list…spelt flour (I have that in my cupboard), brown rice syrup (huh, that too), soy milk (what?)…and got to the end and realized that it was already a vegan recipe!  Who would have thought it?  Not labeled as vegan, not in a veg magazine, but totally and completely vegan.*

So I went ahead and made Gwyneth’s (happens-to-be-vegan) Brownie Recipe.  If you don’t get the magazine, click on their website for the recipe. I used whole spelt flour rather than refined, because it was what I had on hand, and I also added some vegan white chocolate chips on top since I recently picked them up at Sidecar for Pigs Peace.  They were very good!  Nice, rich dark chocolate flavor – strong enough even for my husband who likes it as dark as can be.  The texture was a little bit fluffy for his taste (he prefers them dense and chewy), but I actually relished the soft and tender texture.    I recommend eating them with a fork, warm from the oven while the chocolate chips are still melty and gooey.

*Note:  Some chocolate chips are vegan, and some are not – you have to check the ingredients.  Some good vegan brands are Ghirardelli, Guitard, Trader Joe’s brand, the store brand at Fred Meyer (FMV or something like that), Whole Foods Brand, and many more.  The Nestle’s Toll House brand does contain milk fat as do some other brands.

Top 10 Things Never to Say to a Vegan

Have you ever met a vegan and then put your foot in your mouth?  I’m here to help!  Here are 10 things to refrain from saying to a vegan.

10.  ”If you were stranded on a desert island, and there was nothing to eat but animals, would you eat meat?” Despite the fact that this has nothing to do with most of our current lives, we hear this one ALL.  THE.  TIME.  It’s really not as clever as you think!  ;)  First, we’d probably eat some coconuts…but yes, if it came down to our survival or the survival of an animal, I’m sure all of us would choose ourselves.  What’s your point?  If I was in a dire survival situation I might also drink my own urine a la Bear Grylls, so should I start doing that, too?  (Okay, maybe I wouldn’t, I don’t know…but you see what I’m getting at?)

9.  ”But where do you get your protein?” Legumes, whole grains, vegetables, nuts, seeds…pretty much every food in the plant kingdom contains protein.   If you are getting enough calories, you are more than likely getting plenty of protein.  Most meat-eaters get twice the RDA for protein!

8.  ”I just ate <insert name of animal body part here> for lunch, it was soooo yummy!”  and then on and on and on, describing it in great detail. Um…vegan here!  Not really interested in hearing how the meat was just “falling off the bone” and now I’m starting to get nauseous.

7.  ”Plants have feelings too!  Don’t you care about the poor carrots?” Really?  Really?! If you truly can’t see the difference between pulling a carrot out of the ground and slitting a chicken’s throat, why don’t you try doing both and see if you feel the same about both acts?

6.  ”If humans weren’t meant to eat meat, why are animals so tasty?” If you cooked me up on the grill, my flesh would probably be tasty too, especially with BBQ sauce…but I’m pretty sure that’s not the reason that I am on this earth!

5.  ”So what made you decide to become a vegan?”…asked in the middle of a big family dinner while eating a hunk of ham. Sorry, I really would love to answer this question, but not in that context!  There is no way the vegan can come out of that one without offending someone or creating an awkward silence.  Go ahead and ask the question, just wait until after dinner.

4.  ”Oh, I could never go vegan.  I love meat way too much!  And I could never live without cheese!” Don’t assume that just because someone is vegan, they never liked the taste of meat or cheese.  Most vegans that I know had a hard time giving up cheese, at least initially.  Why do you think vegans are going nuts over Daiya?  Going vegan was an ethical decision that I made because I didn’t want to contribute to animal cruelty.  It wasn’t easy to say goodbye to cheese and I think that is probably a big part of why I’ve gone back and forth so many times between vegetarian and vegan.   I guess this question bugs me because it assumes that veganism is simply a taste preference, and that if you like meat or cheese enough, then you are exempt from considering the issues.  But none of this matters to the animal.  The mother cow whose calf is being taken away is not going to think, “oh, it’s okay though, because this is for someone who really, really loves cheese.”

3.  ”I feel sorry for you, that you can’t eat <insert animal food here>.” For one thing, let’s talk about that word “can’t.”  Unless a vegan also happens to have an allergy to meat, dairy, or eggs, the more applicable word is “won’t.”  I can eat whatever I want.  I choose not to eat animals.  I find it is much more empowering to view it in this way.  So please don’t feel sorry for me!   I am happy with my choice and I enjoy the wide variety of plant foods that I eat every single day.  Even though we may have once loved steak, the longer we are vegan the more we start viewing it as an animal’s dead body, and some of us are actually turned off by the sight and smell of meat.

2.  ”You sure don’t look like a vegan!” What’s this supposed to mean?  Are we too fat?  Are we too thin?  Do we not have enough tattoos or dreadlocks?  Vegans come in all shapes and sizes.  Wouldn’t it be boring if we all looked the same?

1.  Why don’t you care about people?  Aren’t people more important than animals? This one always boggles my mind.   Going vegan is not activism in itself, it is simply a way to live in accordance with our values.  More obviously, I want to point out that people can care about more than one cause at the same time!  You could work at the animal shelter and volunteer at the homeless shelter.  You could donate money to Farm Sanctuary and to the Red Cross.  And many vegans combine these passions, through organizations like Food Not Bombs or by hosting a Vegan Bake Sale to support relief efforts in Japan or Haiti.

So there you have it.  Fellow vegans, tell me, what am I missing? Meat-eaters, if you’ve said any of the above things to me, don’t worry, I still love you!  ;)

Seattle’s Mighty-O Donuts Wins Food Network Challenge!

Did anyone tune in to the Food Network Donut Challenge on Sunday night?  Seattle’s own vegan donut shop, Mighty-O Donuts, competed and they won!

I’ve never actually been down to the Mighty-O shop, but I have sampled their goodies as our local PCC Natural Markets and Whole Foods Market both sell them.  I have even ordered them along with my weekly Spud.com produce delivery!  These donuts are fantastic.  Congratulations Sara Beth Russert and Mighty-O team!!

If you live near Seattle, as I do, the best is yet to come.  Mighty-O Donuts is hosting a viewing party at their shop on Wednesday, April 27th, from 5:30 – 7:30 pm.  The address is 2110 North 55th Street in Seattle.  Come watch the show and enjoy free donuts and coffee!  Sounds like a fun evening to me, and I am definitely going to try to make it.  Anyone want to join me?

My Husband’s (Energy) Balls

When we were dating, my husband and I loved to cook together.  One of our favorite dating activities was to go to the grocery store together and buy ingredients, rent a movie, and then go to one of our apartments and cook and eat while we watched the movie.  After we were married, he cooked at least half of our meals.

Somewhere along the way, I became a stay at home mom and took over all the cooking.   So imagine my surprise when my husband got up in the middle of watching Parks and Recreation with me, went into the kitchen, and started to make something!  I went in to investigate, and he was preparing these delicious energy balls for our upcoming trip.  They are so simple and tasty, and will make an excellent road snack.

Energy Balls:

  • 1 cup chunky peanut butter (he used Adams)
  • 1/2 cup quick oats
  • 1/2 cup chocolate chips, chopped
  • 1/2 cup raisins
  • 1/2 cup flaked coconut

Preparation:

Combine peanut butter, oats, chocolate chips, and raisins in a bowl, and mix well.  Form into golf ball-sized balls and roll each one in coconut.  Place on waxed paper and set in the refrigerator to chill.

We are heading up to the mountains tomorrow to spend three days holed up in a little mountain cabin, just the five of us.  We did this last year and we all loved getting away as a family.  As much as we enjoy visiting relatives or vacationing with friends, there is a whole new level of relaxation when we get away by ourselves.  Unfortunately, I’m not sure we’ll have a repeat of last year’s blissful trip.  Our toddler came down with the stomach flu a couple of days ago, and now that he’s over the worst of it, our five year old has it.  It is too late to get a refund, so we’re going to brave the trip and hope against hope that nobody throws up in the car!  Cross your fingers for us.  And don’t worry, the cabin comes fully equipped with a washer and dryer…something that I fear we may be using a little too much!  And if our time away turns into a giant puke-fest, at least I’ll have something to blog about when I get home… (sob!)

UPDATE:  Now husband and 7 year old are also sick.  I’m now officially the only healthy person in the house!  Which means I’m also the only one able to clean up vomit and wash the mountains of sheets, blankets, and clothing that we are going through.  But hey, I’m not going to complain, I can see how miserable everyone else is and I know I’m definitely the lucky one.  ;)   Our cabin rental company is graciously making an exception to their policy and letting us shift our reservation over by a couple of days, so hopefully the worst will be over by Tuesday!

Can you be vegan at Denny’s? Why, yes! Yes, you can!

I hope this blog has shown how simple it is to create delicious vegan meals at home.  But that’s the easy part.  Eating out often poses a much greater challenge for vegans.  Which is why I’ve often labeled myself as a “vegetarian while out, vegan at home.”  Recently, though, I’ve been feeling more and more inclined be vegan across the board.  After all, when vegans request food prepared without eggs and dairy while they are out, I think this can help send the message that there is a demand for vegan food, and restaurants will eventually start offering more vegan menu items.

I know I’m spoiled, living in the Seattle area.  There are many vegetarian restaurants and even several amazing all-vegan restaurants that I could go to!  But, I don’t live in a vegan bubble.  I don’t know any vegans in real life.  I only know a small handful of vegetarians.  Most of my friends and all of my extended family eat an omnivorous diet.  So I’m not always going to drag them to Chaco Canyon Cafe, much as I love that place and their incredible pesto melt!   Sometimes I’ll end up at Denny’s.

If you haven’t been in a Denny’s lately, they’ve totally revamped their menu.  I remember when their veggie burger was a Boca Burger on a white bun with just the standard fixin’s.  Now when you order a veggie burger, you get an Amy’s burger (so delicious, tender, flavorful, and vegan!) on a whole wheat bun (contains honey, but otherwise vegan), sauteed mushrooms, baby spinach, and tomato slices!  Just ask them to hold the cheese and mayo, and you get an incredibly delicious vegan burger.  If you avoid honey, ask for a white bun.

On the side, you can get fries, fruit, or salad.  I have had a traditional Denny’s salad in the past, and it is not very exciting.  But when I flipped through the menu, I noticed this beautiful baby greens salad with apples, candied pecans, dried cranberries, and balsamic vinaigrette…and a bunch of chicken pieces on top.  I asked our server if I could order that without the chicken and without the bread that comes with, and she obliged.  It tasted fantastic!  I was a little unsure of whether the candied pecans would be vegan, but I checked the Denny’s website for allergens when I got home, and the candied pecans don’t contain any dairy or eggs.  Yay!

I left Denny’s feeling completely satisifed…I had a wonderful, healthful, filling meal, without compromising my ethics.  Now if they would only put some vegan pancakes or waffles on their menu…and some scrambled tofu, and tempeh bacon…that would be perfect!

Moosewood: Black Bean Soup

The very first vegetarian cookbook I ever owned is Moosewood Restaurant Cooks at Home.  My sister gave it to me soon after my husband and I went vegetarian in 2003.  The first recipe that I made from it is on the very first page of the book, a simple, ridiculously easy black bean soup.

I’ve been making this soup on a regular basis every since.  I can get it on the table in less than 30 minutes from the time I start chopping the onion, and every single member of the family loves it!  Tonight I served it with some guacamole, salsa, cilantro, warm corn tortillas, and roasted cauliflower.

Freshly made guacamole is so delicious, and I have the perfect cheater recipe.  Mash up 2 avocados, add 2-3 Tbsp fresh salsa, and salt to taste.  Done!

Vive Le Vegan! – Apple Hemp Muffins

When I pick up my 5 year old son from pre-Kindergarten, we drive right past a Starbucks.  I have a little coffee habit and I’ve stopped by Starbucks before or after preschool more often than I’d care to admit.  My son’s favorite treat is their blueberry scone or 8-grain roll, neither of which is vegan, unfortunately.  (For awhile I thought the 8-grain roll was vegan, but after checking the ingredients list on their website, it turns out they brush some egg white on the outside.  Grrr…)   Even though my kiddos are not completely vegan outside the house, I’ve been trying not to spend our family money on non-vegan food.  So I said, nope, let’s save money and be kinder to the animals, and make our own treat this afternoon!  Not to mention how much I save by brewing my own coffee.

As I was driving home, I realized that we are completely out of sugar.  And Earth Balance margarine.  And blueberries.  Hmmmm…blueberry scones were not going to happen.  And how could I bake anything without sugar?

We do have a big jug of maple syrup in the refrigerator, and considering that, I immediately knew who to turn to!  My favorite vegan cookbook author of all time, Dreena Burton.  She lives in Canada and has ready access to maple syrup, and a lot of her recipes use that instead of sugar.  I flipped open Vive Le Vegan and sure enough, there was a healthy muffin recipe using only maple syrup as a sweetener.  It also calls for whole grains, applesauce, and hemp seeds, all of which I had on hand.  (Yep…I’m the kind of person that keeps a stock of hemp seeds on hand!  I buy it in bulk from Amazon so I have backup bags of it in the freezer.)

These muffins don’t have a lot of oil in them (3 Tbsp), so I was expecting a tougher, dryer muffin than I’m used to.  So I was completely shocked when I bit into one and it was super moist and tender!  These muffins are fantastic, they really are.  And they are just about as healthy as a muffin could possibly get.  I think this will be a great base recipe to play with, too.  I could see adding a dollop of jam to the centers, or adding some chopped apple.  The possibilities abound!

I cannot recommend Dreena Burton’s cookbooks highly enough.  My favorite one is still Vive Le Vegan, and there are some stellar recipes in Eat, Drink, & Be Vegan as well.  When I turn to Dreena’s cookbooks, I know we will be having delicious and nutritious food.  She is a mom of three kiddos, like myself, so I know she has her family’s health in mind when creating recipes.  I also know that I will be able to make most of them easily with my kids underfoot!
